ALCHEMIQ Catering Special Event For IWC Schaffhausen with Pernod Ricard

Finally, New York! The weather is getting warmer and people are more eager to get out of their homes. And what that means for New York City residents and event and catering companies in New York: the events in New York City start to occur more often. This is the time of the year when new collections are being launched, announcements are being dropped and Page Six begins chatting about the most fabulous summer parties in New York.

ALCHEMIQ had the opportunity to be a part of such an extraordinary event. A few weeks ago, ALCHEMIQ was asked to collaborate with IWC Schaffhausen and Pernod Ricard to create a unique experience around the new Da Vinci watch collection. The event required some luxury hors d’oeuvre service with cocktails inspired by the new watches. And while watches and cocktails do not seem to go hand-in-hand, New York city’s top catering company and mixologists took the challenge and ran with it.

ALCHEMIQ served their mini olive crusted cones with a zesty avocado mousse made with ginger, galangal, lemongrass and makrut lime; and the refreshing “Watermelon Radish Clips” filled a Russ & Daughters’ smoked sable, horseradish whipped cream, caramelized onions and capers. The guests of this luxurious New York City event also had the opportunity to indulge in the “Alchemiq Rolls,” the most popular item from ALCHEMIQ’s menu: a vinegar-cured zucchini slice rolled with goat cheese, sunflower seeds and avocado. ALCHEMIQ also debuted the fluke crudo with mascarpone and white truffle pearls, which was absolutely delicious!

A portion of the event was a presentation of the Da Vinci watch collection. Beautiful models presented the impressive new line of watches, while a mixologist presented cocktails inspired by the watches. Igor Zukowiec, mixologist, caterer and the founder of ALCHEMIQ, took on the challenge to come up with three cocktails with some of the luxury brands from Pernod Ricard portfolio in mind.

The first cocktail was inspired by the Da Vinci Diamonds; it was a twist on a French 75 cocktail served in a tall Collins glass. The cocktail was made with Monkey 47 Gin and Perrier Jouet Champagne. Igor used crushed ice to represent the watch’s 54 diamonds and a stainless steel straw to represent the watch’s stainless steel case. The watch came with a raspberry-colored alligator leather strap while the cocktail was made with a raspberry juice. Instead of lemon juice, Igor went for citric acid solution to keep the raspberry color brighter.

The second cocktail was inspired by Da Vinci Automatic 36 Moonphase, a watch with moon phase complication and dark blue leather strap. The cocktail was made with Absolut Elyx, fresh blueberries and butterfly pea flower tea from Wild Hibiscus Company to showcase the dark blue color without using artificial ingredients. Igor also used an elderberry tincture made trough a moon phase cycle and then topped the cocktail with a molecular citrusy foam. Then he used a stencil to spray the “flower of life” symbol that’s engraved on the watch’s back.

The third cocktail was inspired by a classically simple Da Vinci Automatic. Igor used the bold Glenlivet Family Reserve to mix it up with fresh peaches and chamomile. Keeping the cocktail on the bolder side, Igor served it with a blue ice sphere to represent the watch’s contrasting blue seconds hand and its round case. The double old fashioned glass that was used for the cocktail was garnished with an edible gold leaf to represent the gold plated hour and minute hands.

ALCHEMIQ’s food options for Spring 2017 can best be described as multi-cultural delights, starring items such as Thai Style Lamb Bites; Italian Sausage Stuffed Mushrooms; Hoisin Glazed Duck Crêpe; Minced Chicken Tacos with Pineapple Salsa; and Champagne Caviar Oysters. In addition, friendly to everyone, ALCHEMIQ’s menu hosts various vegetarian and vegan options for the omnivore clients, such as Cucumber Flower Canapés; Avocado Mousse in Olive Cones; Mini Lettuce Wraps with Strawberry, Basil, Almond & Balsamic. Nothing is simple at ALCHEMIQ as each individual hors d'oeuvre has a unique signature twist to it, such as the “Tenderloin Semicruda,” which is topped with white truffle mayo and served on a parmesan cracker.  And, for those with a sweet tooth, the desserts are truly decadent, featuring French Glazed Mousses; Verrines; Trendy Cake Pops; and S’mores Macarons.

The Spring 2017 menu contains a large selection of “Fancy Cocktails,” with liquors and flavors to refresh and satisfy. But ALCHEMIQ does not stop at simply offering these cocktails. Instead, offers to serve the already delicious beverages with theatrical techniques such as dry ice chilling, stencil-spraying your logo or smoking your ready concoction. These beverages will not only satisfy the biggest of drink snobs, but will also work as a conversation starter and show stopper.

New York Catering Companies vs. Craft Cocktail Catering in NYC

There are hundreds of catering companies in NYC. Each of them has a different offering, different approach and ideas. Everyone is trying to come up with something new and exciting. The usual approach is to have a unique menu with food presentations that are there to surprise guests. Some other players on the market go with a focus on a certain niche, for example organic food, oyster service or molecular cuisine.

When it comes to cocktail caterers NYC doesn’t have that many of them. Of course, by “cocktail caterers” I mean caterers that offer only a beverage and/or a mixology service; not caterers that cater cocktail parties. I’ve noticed the lack in a variety of this kind of companies many years ago. I did some research among many leading NYC catering companies and found out that they all offered amazing food experience, but the catering bar program was as simple as the program at my local dive bar.

I couldn’t understand why one of the greatest cities in the world with some of the most imaginative people in the industry had such a gap in the mixology offering. In order to find out I needed to get to the bottom of this.

I’ve decided to try to run a few events with a craft cocktail offering to figure out what the challenge was. It all came down to an extensive prep and finding the right people to tend the bars. Apparently, the usual catering bartender has completely different skill set than a cocktail bar bartender. Since the catering business has never gotten into the craft cocktail movement the people who worked in the industry didn’t learn anything about it.

On the other hand, the cocktail bar bartenders are not skilled for this kind of volume that occur on catering functions. During the events lots of people come at the same time and want their drinks right away. It’s much different than what happens at restaurants or bars.

My conclusion was that craft cocktails and high-end mixology requires a new approach in order to do it right at catering functions. I don’t know what was the reason all caterers hesitated with coming up with the new approach when the strong craft cocktail movement was happening at bars and restaurants all over the country. One might only guess.

I’ve decided to take on that challenge. I’ve initially started to build the right team and teach them how to speed up the cocktail making process while still keeping it artisanal. I’ve perfected cocktail batching techniques. Then I figured out the right setup and workflow.

When the bar related issues were resolved I started with coming up with the whole concept of my catering. I started with only hors d’oeuvres and cocktails. I figured finger food go hand in hand with craft cocktails and I put my bet on it. ALCHEMIQ Catering was a hit from the start. New York has never seen a concept like that and the word started to spread fast. Soon after I’ve decided on adding chefs stations to the offering as well as the most incredible desserts.
